Summer Dining: Peach, Tomato and Blueberry Salad with Arugula and Mozzarella

Summer doesn’t just give us longer days, it also provides us with an abundance of fresh fruits, vegetables and my fav—flowers. While spending June and July in Ohio, I’ve been so inspired by the wildflowers as well as the fresh tomatoes, corn, peaches, blueberries, cherries and other fresh produce at the local farmer’s markets. And since my mom always requests that I style her dining room table, I decided for July/August we should create a summer farmhouse feel and feature all the seasonal goods as well as some classic vintage finds.

My parents live in central Ohio where there is currently a variety of wildflowers growing along the freeways and country streets. Everywhere I seem to go, blue asters and white Queen Annes Lace seem to be taking over and the other day I decided we needed to bring a few of these beauties inside. So my niece and I went on a walk along a neighboring bike path and collected a few. It was a fun excursion that resulted in a very pretty and casual summer table.

The wildflowers fit perfectly in small vintage apothecary bottles. When thrifting you can usually find a variety of them and the prices range from $1 to $5. Of course, some get more expensive, but I usually pass on those unless they really have a cool feature. The small arrangements lended to the casual feel of the summer table and mimicked the random look of how wildflowers grow in nature.

Continuing the casual summer feel, we paired the wildflower arrangements with a collection of vintage brass candlesticks. I love the mix of all the different shapes and patinas. It not only keeps the table casual, but also makes it feel elegant and perhaps a bit romantic at the same time.

The vintage apothecary bottles and brass candlesticks called for some vintage silverware. Luckily my mom has a few sets so we got out the dainty flatware and I think it really lended to the overall feel of the table.

The crisp white plates created a perfect backdrop for our colorful Peach, Tomato and Blueberry Salad with Arugula and Mozzarella. We had this for lunch yesterday and let me tell you, the combination of sweet and savory is oh so good.

Summer Farmhouse Table Inspiration

The recipe was inspired by one we saw in Sunset Magazine. We didn’t have all the ingredients so we used a homemade Italian Dressing instead of the white balsamic dressing the recipe called for. Plus we added blueberries. Since everything is currently in season, the flavors really come from the fresh produce.

You can make this salad on a large platter, but we decided to plate each salad individually since it really works nice as a layered salad. Below is the basic how to, just buy enough of each ingredients so that each guest gets a few slices of tomato and peaches—the stars of this salad.

Salad Ingredients: 

  • Tomatoes, sliced and salted
  • Peaches, sliced thinly
  • Blueberries
  • Mozzarella
  • Arugula (just enough to add flavor and act as a garnish, the real stars of this salad are the tomatoes and peaches)
  • Olive Oil & Balsamic Vinegar OR Italian Salad Dressing

To Make the Salad:

In small bowl dress your arugula with your Italian salad dressing or olive oil/balsamic vinegar. We used a homemade salad dressing that worked nicely. On a salad plate, place a few slices of tomato and salt the tomatoes. Then on top of the tomatoes place a small small amount of the dressed arugula. On top of the arugula add your peach slices. Sprinkle with blueberries and then top with a few slices of mozzarella. We then finished the salad with another drizzle of olive oil on top.

Peach Brushetta

My mom then requested my Peach Bruschetta that I made last year. And since we had a lot of ripe peaches, I was happy to oblige.

Peach Brushetta

We served the Peach Bruschetta on tiny appetizer plates from Crate and Barrel. The pressed glass cocktail glasses were also from Crate and Barrel and are a charming way to serve wine. They both lend to the modern farmhouse feel as well.
